Tag Spaces is simple to operate and the UI should refect that. Some colour to the UI wouldn't do any harm though, it's not very interesting to look at as it is.
I certainly don't think adding a different UI will generate much, if any extra interest, UI is a subjective issue and there are many people who dislike MS Ribbon as an example.

I would like some kind of date stamp - due date, expiration date etc. Why not a button that adds a date stamp to the file, but which is configurable by the user eg, in Sam's case, to say exp:XXXXX, or in my case, Due:xxxxx, Let the user decide what text, if any is to added before the date stamp, and let the 'button' simply add the date. Brilliant idea

Doesn't need it. As stated, simply point tagspaces at your Dropbox folder. How else would you do it? Not using the Dropbox folder could lead to duplicated files being synched from the two folder locations, each with different tags. That's exactly what cloud synching is supposed to prevent!
